Shrimp & Cracked Wheat Salad

Ingredients
- 150g bulghur wheat* (cracked)
- 1tsp salt
- 250g Shore Mariner Cooked Shrimps or Cooked Cutlets, defrosted & drained
- ½ small red onion, finely diced
- 2 cloves garlic, minced
- ½ cucumber, diced
- 2 tomatoes, seeds removed and diced
- Small bunch parsley, finely chopped
- Small bunch mint, finely chopped
- ½ lemon, juiced
- salt & pepper to taste
- 50ml good quality olive oil
Method
Place the wheat into a bowl with the salt and pour enough boiling water to cover. Cover with glad wrap and leave for 20 minutes.
While the wheat is softening place the rest of the ingredients into a large mixing bowl.
After 20 minutes check the wheat and fluff with a fork to break it up. Cover & leave for another 5 minutes. Combine the wheat with the rest of the ingredients, toss together and season with salt and pepper.
Drizzle with a little olive oil & serve.
*Substitute: 1 cup of Cous Cous if you can't get hold of bulghur wheat
