Chinese Fried Rice with Shrimp
Ingredients
- 2 Tblsp vegetable oil
- 2 eggs, beaten with pinch salt
- 2 stalks celery, chopped
- 1 red pepper, deseeded and diced
- 2-3 spring onions, finely sliced
- 1 tsp mashed garlic
- 3 cups cold cooked rice
- 250 grams Shore Mariner Cooked and Peeled Shrimps, defrosted and drained
- 2 Tblsp soy sauce
Method

Heat 1 Tblsp oil in a non stick wok or deep frying pan, pour in beaten eggs, beat lightly with a fork until the egg is just starting to set, turn and cook briefly on the underside.
Transfer to a plate and cut into strips.
Add remaining oil to wok, add celery and red pepper, stir fry over a medium heat for 2 minutes, add spring onions and garlic, continue cooking for a further minute.
Add rice, Shore Mariner Shrimps and soy sauce and stir fry until everything is very hot. Toss through the egg strips. Serve immediately.
