Prawn Curry
Ingredients
- 1-2 Tblsp vegetable oil
- 1 onion, peeled and sliced
- 1-2 tsp mashed garlic
- 2 tsp minced ginger
- 2 Tblsp medium curry paste
- 400 gram can chopped tomatoes in juice
- 1/2 cup fish or vegetable stock
- 500 grams Shore Mariner Raw Prawn Meat, defrosted and drained
- 1-2 Tblsp fresh coriander or parsley leaves

Heat oil in a medium large saucepan or wok, gently fry onion, garlic and ginger until tender and just starting to colour.
Add curry paste and cook, stirring for 1 minute, mix in tomatoes and stock, simmer gently for 5-6 minutes.
Add Shore Mariner Prawn Meat to the pan, simmer for a further 4-5 minutes until the prawns turn pink.
Stir in fresh coriander and serve immediately with rice and warm naan bread.
