Seafood Salad

A quick and easy summer salad using a variety of our seafood.


Serves 4

Ready in 30 minutes

 

Ingredients

·        100 grams Sea Breeze Scallops, defrosted and drained

·        100 grams Shore Mariner Cooked and Peeled Shrimps, defrosted and drained

·        100 grams Shore Mariner Salad Mix, defrosted and drained

·        3 peppers, red, green, yellow

·        6 Tblsp olive oil

·        4 cloves garlic

·        2 Tblsp lemon juice

·        Salt & pepper for seasoning

·        Cos lettuce

  

Method

Cut peppers in half and seed, brush with olive oil and place skin side up in a roasting tray.  Add garlic to the tray. Grill at 200°C for 10 minutes or until the pepper skin blisters and blackens. Remove garlic and put aside. 

 

Place peppers in a bowl and cover. Allow peppers to cool then peel away the skin and cut into thin strips.  Panfry scallops, turning once, until golden brown and just cooked through.

 

Mix the scallops, shrimps and salad mix together with the peppers.

Blend lemon juice, garlic, olive oil, salt & pepper.  Pour over seafood and combine well.

 

Arrange on a plate in cos lettuce leaves.
