Sweet Chilli Prawns With Hot Noodle Salad


Serves 4

Ready in 25 minutes

 

Ingredients

·        2 Tblsp soy oil

·        1 red onion, sliced

·        1 clove garlic, finely chopped

·        500gms Shore Mariner Raw Prawn Cutlets

·        2 Tblsp sweet chili sauce

·        ½ red pepper, sliced

·        ½ yellow pepper sliced

·        1 cup green beans, sliced or snow peas

·        2 bok choy, sliced

·        1 cup vegetable or seafood stock

·        2-3 Tblsp soy sauce

·        4 portions egg noodles, soaked in boiling water for 5 minutes then drained.

·        Fresh herbs & black sesame seeds for garnish (optional)

 

Method

Heat oil in a frying pan or wok and sauté onion, garlic and prawn cutlets 2-3 minutes, add sweet chilli sauce and cook until prawns are pink and caramelised. Remove from the pan.

 

Add peppers, beans and bok choy to the pan with the water and simmer 2-3 minutes until just cooked, add soy sauce, noodles and prawns back to heat through.

 

To serve place noodles on plates and top with prawns, garnish with fresh herbs and black sesame seeds.
